For lunch I made a simple pasta. I started by sautéing one roughly chopped onion in water until soft. I then added 2 tbsps sriracha, 2 tbsps lemon juice, salt, pepper, onion powder, garlic powder, nutritional yeast for that cheesy flavor and some paprika powder. When the spices (about 1 tbsp each except the nutritional yeast which was 4 tbsps) worked their way in to the onion I added about 2 cups of fresh baby spinach, 2 diced tomatoes and 1/3 cup of oat cream. I boiled some pasta and added that to the sauce and added some more salt, pepper and nutritional yeast before giving it a good stir.
In the oven (200 degrees Celcius)I baked a zucchini coated in a tiny bit of avocado oil, onion powder, garlic powder, salt and nutritional yeast, for about 30 minutes.
I then added the pasta to a bowl and placed some zucchini fries on top. This made a very filling and delicious lunch but works great as a dinner as well.
